Easy Puff Pastry Tarts

Impress your guests and even yourself with these showstopping and surprisingly easy tarts, thanks to the power of eggs. The base recipe here features a savory prosciutto and arugula filling, but you can customize them so many ways! See the notes below for sweet and savory variations.
Directions
- Preheat the oven to 400 F. Set the rack to the middle. Prepare a baking sheet with parchment paper.
- Thaw the puff pastry sheets. Cut both sheets into 4 equal pieces (8 total).
- Transfer the cut puff pastry pieces to the prepared baking sheet.
- Use a knife to score a half-inch border around the edges (cut halfway down – but not all the way through – the pastry). Using a fork, prick only the middle of each piece of pastry, to prevent it from puffing in the oven.
- Whisk one egg with a teaspoon of water and, using a pastry brush, brush the edges of each puff pastry.
- Add creamy herbed cheese in the middle of two pieces of puff pastry. Top with arugula add the prosciutto, making a circle with each piece.
- Add a cracked egg gently into the center of each pastry. Sprinkle with everything bagel seasoning on top of the edges and center.
- Bake for 15 minutes, or until golden and fully cooked through.
- Finish and serve; enjoy while warm.
Ingredients
- 2 sheetspuff pastry dough
- 8 + 1 (egg wash)egg
- 1 cup, dividedherbed cheese
- 1 cuparugula
- 8 slices, dividedprosciutto
- 4 tspeverything bagel seasoning
Make It Your Way
Layer puff pastry with your favorite sweet or savory leftovers — like berries and cream cheese or your favorite greens, cheese and meat. Then top with a few with eggs before baking for an easy, upgraded meal that feels anything but last-minute.
Flavor variations (filling for 2 pastries each):
Apple & Ricotta:
- ¼ cup ricotta
- 1 ½ teaspoon sugar
- ¼ teaspoon vanilla extract
- ½ apple, thinly sliced
- ½ teaspoon sugar, divided for topping
Make the ricotta filling by combining ricotta cheese, sugar and vanilla extract and mixing well. Divide between two pieces of puff pastries. Thinly slice half an apple and add on top of the ricotta mixture. Sprinkle it with sugar on top of the filling.
Bacon & Cheddar:
- 2 slices bacon, cooked, chopped, divided
- ¼ cup cheddar cheese, shredded and divided
- 2 eggs, divided
- ¼ teaspoon salt, divided
- 2 tablespoons chives, chopped and divided
- 1 teaspoon sesame seeds, divided
Top two pieces of puff pastry with shredded cheddar cheese, then add chopped bacon. Top with an egg on each piece, top with a sprinkle of salt on the egg then add chopped chives.
Mixed Berry:
- ¼ cup cream cheese, room temperature
- 1 ½ teaspoon sugar
- ¼ teaspoon vanilla extract
- 14 blackberries, divided (or your fave berries)
- 14 raspberries, divided (or your fave berries)
- ½ teaspoon sugar, divided for topping
Make the cream cheese filling by adding cream cheese, sugar, vanilla and mix well to combine. Top with berries. Sprinkle it with sugar on top of the filling.
