Green Chile Fondue Baked Eggs
Eggs take the lead for your newest favorite comfort meal. Bake eggs in a savory mix of simple ingredients like spinach, cream and cheese for a cozy, budget-friendly baked dish that’s perfect for dipping into.
Directions
- Preheat your oven to 350 degrees.
- Spray a 9X9 baking dish with nonstick cooking spray and set aside.
- Preheat a large nonstick skillet to medium-high heat.
- Melt the butter and then add in the red onion, green onions, kosher salt, and pepper. Cook the veggies for about 7 to 8 minutes or until softened.
- Add in the garlic and Dijon mustard. Cook, stirring for about 30 seconds. Add in the baby spinach followed by green chiles. Continue to cook for two more minutes and then stir in the heavy cream. Let the cream mixture simmer for a few minutes and then remove the skillet from heat.
- Stir in the ricotta and mozzarella cheese until smooth. Pour the fondue mixture into the prepared baking dish. Using a spatula, push the fondue sauce to create a well and place an egg into the bottom. Repeat the process with the remaining eggs.
- Bake the eggs for about 20 to 25 minutes, checking midway through to make sure the eggs are setting. Once the eggs are set, remove from the oven and garnish with parsley, green onions, and serve with crostini.
